Delicious and healthy breakfast muffins? YES! Packed with protein, fiber, healthy fats, and low sugar, you can actually feel good about eating these muffins.
Ingredients:
2 1/2 C of Gluten Free Oats, divided
1/2 C Vanilla Protein powder*
2 Tbs od Chia Seeds
1/2 C Raw Pecans
1 C Unsweetened Coconut or Flax milk
1 1/2 C Fresh Blueberries
2 Lemons - Zest and Juice
1/2 tsp Stevia or Monk Fruit**
1/3 C Coconut oil
1 tsp Baking soda
1 tsp Sea salt
1 tsp Cardamom or Cinnamon
Directions:
1. Preheat the oven to 350F.
2. Line the muffin tray with unbleached liners.
3. Place 1 1/2 C of GF oats into a blender and pulse on high speed until flour consistency.
4. Chop the pecans
5. Combine first four ingredients in a large bowl and mix.
6. Combine remaining ingredients (except blueberries) in a separate bowl.
7. Mix all to combine folding the blueberries in at the end.
8. Transfer the mixture into prepared muffin tray.
9. Bake for 25-30 minutes or until golden brown.
10. Let them cool, without eating them, for then 10 min.
Note:
* I use Vega Vanilla Protein
** You can substitute Stevia or Monk Fruit for 1/4 of Coconut sugar
